Trail Mix Energy Balls
Who loves energy balls/bites?? There are so many recipes out there. I usually make a variety with oats, honey, chocolate chips, chia seeds and peanut butter (maybe you've had them!) But it's fun to switch things up every now and then!
Our family loves to vacation in Cape May every summer and this recipe was inspired by my favorite Cape May coffee shop - Out There Coffee. I have tried to re-create the recipe the best I can. They taste like oat-y, walnut-y deliciousness with the perfect amount of sweetness and saltiness. I also love that there are no big chunks of anything - I even chop up the cranberries. They make a great snack or quick breakfast on the go!
Ingredients
3/4 cup unsweetened and unsalted (or lightly salted) trail mix blend (I prefer using a combo of dried cranberries, walnuts, and pepitas)
1-1/2 cups rolled oats (you can also use old-fashioned)
3/4 cup almond butter
1/2 cup honey
1/2 tsp. salt
1-1/2 tsp. pure vanilla extract
Directions
1. Add your trail mix blend to some kind of food processor or chopper. Pulse until the ingredients have been chopped into smaller pieces.
2. Add the chopped trail mix blend to a stand mixer with a paddle. Add all other ingredients. Mix on medium speed until all ingredients are combined.
3. Form the mixture into balls (about golfball size). Place in a sealed storage container and keep in the fridge for up to 1 week.
